Dice the smoked tofu, slice the gherkins, and chop the chives.
50 mls Almond milk
1 tbsp Almond Butter
1 pinch Paprika Powder
1 pinch Pepper
1 teaspoon Mustard
Mix some gherkin brine with almond milk, almond butter, mustard, soy sauce, paprika, and pepper.
Add smoked tofu, gherkins, and chives to the sauce and mix well.
Let potatoes cool, peel, cut into pieces, add to the bowl, mix, and let sit briefly. Serve with chives.
